Butternut Squash Soup



Butternut Squash soup is pure comfort food in my family.  I’ve tried making this soup a number of different ways, and each variation has its merits and drawbacks.  The beautiy of this recipe, is it is relatively simple, delicious, and mess free.  Throw in the vegetables, crank on the blender, and in 5 minutes, we’ve got weekday comfort food, a prequel to Thanksgiving I suppose.
